Regional food specialty: “Calcioni” - MoliseIngredients
For the dough
– 200 g white flour
– 50 g lard (or butter or margarine)
– 1 whole egg
– Lemon juice
– salt
For the filling
– 200 g ricotta cheese

 

– 50 g ham, finely diced
– 50 gr scamorza cheese, diced
– 1 egg yolk
– 1 handful chopped parsley
– pepper
– salt
– oil for frying

Preparation
– Mix all the filling ingredients in a bowl.
– Sift the flour on a work surface, make a hollow in the center, put the egg, lard, salt and lemon juice: mix well and spread a thin layer.
– Spread the filling in piles spaced on half of the dough, cover with the other half, press well all around, then cut many records with a cutter or a glass.
– Calcioni Fry in hot oil and drain browned on both sides.
