Rural atmosphere and homemade specialties in Acquavella
The first stage of our journey in Campania is the small town of Acquavella in the province of Salerno, a few kilometers from Casal Velino, in the beautiful landscape of Cilento, where fig trees, vines and olive trees fill the landscape among a series of ancient and well-preserved historical centers. Farmhouse San Giorgio, stemming from the renovation of a typical farm,
offers hospitality in a quiet and simple atmosphere, in the peace of a still unspoilt countryside. In the tavern converted from what was once the mill, you can taste the traditional dishes from Cilento: “cavatielli” and homemade fusilli topped with mutton sauce, a variety of meats, homemade bread, wine and limoncello, all freshly prepared with the products of organic farming. Guests have the opportunity to learn from expert hands the culinary art of the region, by participating in the preparation of pasta and homemade bread.
Fresh cheese and educational farm in Torchiara
Let’s go now towards the north to reach the Farmhouse Il Falco of Cilento, near the village of Torchiara, from where you can enjoy a wonderful view over the Gulf of Salerno. The farm, a short distance from the sea, covers an area of 20 hectares planted with olive groves, vineyards and orchards. At the restaurant you can taste original cuisine, made up of natural flavors; do not miss the fresh cheese made from goat’s milk, stuffed with arugula, thyme, red pepper and yogurt. Several productions to taste: the delicate wildflower honey, olive oil and pickles are traditionally prepared with vegetables, such as eggplant into strips, peppers, squash and artichokes.
And then fresh pasta such as ravioli stuffed with ricotta and cavatielli; delicious jams and marmalades in pieces; the extra virgin olive oil and typical salami that follow a special process: the pork is processed with wine and spices and smoked with olive wood, and then put under vacuum after several months for drying. There are a range of educational paths for kids to discover the link with the environment and the earth, meet the farm animals and appreciate the values of peasant culture. They also organize courses to make fresh pasta and pizza, and approach activities such as olive picking, grape harvest and winemaking.
The colors and scents of the Cilento Park in Albanella
We move north again along the Gulf of Salerno, heading towards Albanella: here lies the Farmhouse La Collinetta, in the Cilento National Park surrounded by Mediterranean vegetation. Scents and colors welcome guests to a landscape full of olive trees, pines, oaks, white figs, elderberries, mulberries,
delicious wild herbs, many of which are edible, making up the ingredients of a number of tasty recipes. The restaurant offers a varied menu and following the season to ensure the freshest products. This is the right place to discover the homemade Cilento cuisine, including homemade pasta, gnocchi, the typical cavatielli, meat and excellent local wines. Then let’s enter the province of Naples, along the clear waters of the Tyrrhenian Sea to reach the small Pimonte, a pleasant village at 350 meters above sea level, and the Farmhouse La Casa del Ghiro, in a wonderful panoramic position in the heart of the Lattari Mountains and surrounded by rich Mediterranean flora.
Guests can attend cooking classes, explore the hiking trails and admire the surrounding woods of the park, as well as the vineyards and olive groves that produce delicious wine and olive oil. The restaurant boasts some professional chefs; on the farm you can taste products from Campania and dishes and menus that use them widely: from artichokes, to olive oil and lemons from the Sorrento Peninsula, and a number of products such as bread from Agerola, tomato Piennolo from the Vesuvius, smoked provolone and Sorrento walnuts. A range of activities and educational courses are devoted especially to schools, to enhance the agricultural products and preserve the recipes and flavors of this land: the farm becomes an open-air workshop for discovering the processing of dairy products.
