Ingredients
-500 gr of short crust pastry
-200 gr of apricot jam
-icing sugar
Preparation
-Prepare the pastry following the specific recipe
-After some time lay down the pastry with a rolling pin onto a cutting board between two sheets of oven paper. The thickness must be about ½ cm.
-Remove one of the sheets and cut some round cookies, then make a hole in the middle. Cookies must always be in pairs: one should be whole, and one with a central round hole.
-Put the cookies onto an oven tray covered in oven paper and put them into the pre-heated oven at 180° C for about 15 minutes.
-Wait until they have cooled down.
-Spread onto the whole cookies the apricot jam, then cover them with a cookie with hole.
-Sprinkle with icing sugar.
