Ingredients:
– ½ stick of celery
– ½ carrot
– 1 onion
– 150 grams of pork meat
– 50 g of veal meat
– 50 g of chicken meat
– 50 g of turkey meat
– Extra virgin olive oil
– White wine
– 2 eggs
– 100 g Parmigiano Reggiano
– Nutmeg
– 50 grams of olives
– flour
– breadcrumbs
– salt
Preparation:
– Wash the celery and carrot, peel the onion and chopped everything and fry in a pan with 2 tablespoons of olive oil.
– Add the meat cut into small pieces and let cook for a few minutes over high heat.
– Add a glass of white wine and cook for about ten minutes on medium heat.
– Put them in a mixer and mince.
– In a bowl, put the minced meat, 1 egg, the Parmesan and nutmeg.
– Cut the olives with a knife starting from the stem and add the mix (meats and vegetables) inside the olives.
– Pass them in flour, beaten egg and in bread crumbs.
– In a pan fry the olives.
– Serve immediately.
