torta carote senza glutineIngredients:
150 g sugar; 70 g di butter; 4 eggs; zest of 1 orange; juice of 1 orange; 350 g carrots; 250 g peeled almonds; 1 packet of baking powder allowed (for example baking powder Easyglut-Pedon).

 


Preparation:
– Work the butter and sugar to foam and grated orange peel, toast slightly the almonds and blend in flour.
– Grate the carrots and squeeze with your hands to come out excess juice; whisk the egg whites, put orange juice gradually into butter and sugar, and egg yolks one at a time. Add the carrots and almonds, baking powder and egg whites gently.
– Put in the oven for 30/35 minutes approx. to 180 °.
– Dust with icing sugar Easyglut (or you can do it with the blender, then add one packet of vanillin. It is very good and safe!).
– Let it cool and … enjoy your cake!
