Ingredients for 4 people:
90g carrots, 150g flour, 1 dose of baking powder for salty cakes, 3 eggs, 50g grated Parmesan cheese, 1 teaspoon dried marjoram, 8 tablespoons extra virgin olive oil, salt, pepper

Preparation:

Take off the top of the carrots, peel and wash them, before cooking them by steaming.

Let them cool.

Mix the eggs with the flour sifted with the baking powder, oil, cheese, marjoram and cooled chopped carrots.

Add salt and pepper, pour the mixture in a muffin pan (with butter and flour at the base) and place it in preheated oven at 180 degrees, cooking the muffins for 40 minutes.
Remove from the oven when they are golden brown on the surface and serve warm.
