Ingredients
For the dough:
200 g sugar
6 eggs
grated rind of 1 lemon
few tablespoons of vanilla essence
200 g wheat flour
60 g cornflour (cornstarch)
200 g butter
vanilla sugar
For the stuffing:
4 egg
50 g sugar
2 tablespoons wheat flour
1 / 4 l milk
Preparation:
Mix in a bowl the sugar, eggs, lemon zest, vanilla and worked quite a long time, so as to obtain a thick. Mix the flour with cornstarch and gradually add the mixture to the other ingredients, mixing carefully.
Melt the butter in a water bath, embed them to the mixture and then pour everything into the mold in the shape of a dove, well buttered and floured. Put in oven, cook for about 1 / 2 hours at 180 ° C and, after checking with a toothpick cooking, the oven and let cool.
In the meantime, prepare the filling: beat the egg yolks with sugar, add the flour, warmed milk and mix well. Then bake in water bath, stirring constantly with a wooden spoon. When forced to take the cream begins to boil, remove it from heat and allow to cool.
Using a knife, incision along the edge of the dove, about halfway up, you put a thin cotton kitchen cutting, cross the ends and pull in order to get a hard edge. Lift the top layer of the dove, place it on a flat surface and pour the cream on bottom layer, distributing it with care.
Cover then with the part you removed and sprinkled with vanilla sugar. Serve with a light dessert wine.
