Ingredients:
150 gr shrimp
1 ripe tomato
1 small clove garlic
fresh basil leaves
3 tablespoons extra virgin olive oil
1 /2 cup brandy
200 gr spaghetti
salt
pepper
Preparation:
Wash the shrimp and boil for 4 minutes in boiling water. Drain and plunge the tomatoes into a saucepan with boiling water so that, after being blanched for a moment, can be easily peeled. Then cut it into pieces.
Finely chop the garlic peeled and chopped the basil, you fry the garlic in a pan in which you poured the oil innaffiatelo with brandy, add the tomato, basil, salt and a pinch of pepper.
Let it cook on a moderate heat, and it is thickened, add the shrimp.
Put the pot on the stove to cook the pasta, when the water begins to boil, add salt and walk down the spaghetti. Cook al dente, drain it, send it back in the pan, stirring with a wooden spoon and then let the fire a moment longer before bringing to the table with a good white wine, aromatic and fresh.
